Today we are going to review a quite intriguing wine blend from the famous Dealu Mare region of Romania – Cuvée Clemence 2022 by SERVE. This wine is a harmonious blend of two major grape varieties: chardonnay (80% – one of the world’s most popular grape varieties, regarded by many as the ‘Queen of Whites‘, prized for its flexibility and for the ability to produce top-notch wines in a wide range of climates and terroirs), and feteasca alba (20% – an old, indigenous romanian variety, that dates back for almost two thousand years – a variety that can produce delicate and elegance wines), where chardonnay forms the wine’s main body and structure, bringing in some much desired lushness on the palate, while feteasca alba adds up-front richness and offers a leaner and a more dynamic finish. This wine is named after Clemence, the second daughter of Count Guy Tyrell de Poix. In order to preserve the varietal characteristics of both grape varieties, the wine has been aged only for 4 months in french oak barriques, which means that the wine went through the malolactic conversion – a process where the crisp, malic acid in the wine is converted into a more softer, lactic acid, which makes the wine feel more silky, gaining extra structure and finesse. Needless to mention that it has been produced in a limited edition of only 4725 bottles. That said and without further ado, let’s move on straight to our tasting results.

Pairing: Judging by the wine’s rich and harmonious mouthfeel, we believe it would pair lovely with dishes based on béchamel sauce, like for example creamy penne pasta. The wine’s crisp acidity will cut beautifully through the richness of the sauce, while the ripe citrus notes in the wine will complement the herbal flavors of the pasta. Additionally, the subtle oak influence in the wine will find a harmonious counterpart in the buttery notes of the béchamel sauce. This pairing has the potential to create a delightful interplay of textures and flavors, with the wine’s round mouthfeel balancing the creaminess of the dish. Enjoy!
