Tonight we are going to review another rosé wine, as we firmly believe that spring is the perfect time to do so. The wine we’ve picked for the review today is Cabernet Sauvignon Rosé 2015 from Castel Mimí – one of the oldest château in Moldova, founded in 1893 by Contsantin Mimi, which was also the latest governor of the eastern half of Moldova. But enough history, let’s get back to the wine tasting.

The nose is strong, filled mostly with sweet fruit and fruit jam: red cherry, red mirabelle, nectarine, white cherry, red currant jam, candy, sicilia orange, wildberry, berberis, cranberry jam and some hints of strawberry.

The wine is dry, with high alcohol level, high acidity and firm tannin. It tastes fruity, crisp and rich, with a fair, oily body. The wine has a fair overall balance, as this is a delicious and zesty rosé wine, with overwhelming acidity.

The wine has a medium-plus finish and a balanced, but maybe just a bit austere, aftertaste.

chartsThis is definitely a fine Wine of Moldova and the overall rating says the same, with 89.8 points scored it is right there, among the best wines we’ve tasted so far. Conclusion: this is a fresh and fruity rosé wine in its peak form, definitely ready to drink now and not worth ageing. It has a quite Provence style color, a sweet nose and a crisp body, which is a very good mix for a rosé wine. We would recommend to pair this wine with fresh fruit salads or some light desserts, like for example a slice of apple pie or some pannacotta with roasted rhubarb.
