The wine we are going to review tonight is neither new nor old, as it was released on the market last summer, yet it is still relatively unnoticed by the wine lovers – Dor Merlot – Saperavi 2016 from Bostavan. It is a rosé wine blend, made of 2 varieties: merlot, which adds body and structure and saperavi, which is responsible for extra flavours and color. This wine is part of the Dor wine series that consists mainly of fresh, lean and quite appealing wines, that can be easily understood without too much fuss, wines that represent the rustic part of the region. That said, let’s find out just how good this wine is.

Quite pale, salmon pink color with shades of pastel rose towards the rim of the glass.

The nose is rich, filled mostly with sweet fruit flavours: strawberry, raspberry, berberry, wolfberry juice, red currant, cranberry, red delicious apple, marmalade, rose hips, watermelon and some nuanced hints of red cherry juice.

The wine is medium-dry, with high alcohol level, high acidity and ripe tannin. This is a fruity, crisp and quite appealing rosé wine, with a zesty-sweet profile, as it feels refreshingly light, smooth and lean. It has a fair overall balance – this is the perfect rosé wine for a chilly autumn evening.

The wine has a medium finish and a balanced, crisp and fresh aftertaste.

Conclusion: this is a quite refreshing rosé wine, well balanced and maybe just a bit too sharp on alcohol – a wine that has just reached the summit of its peak form and it is definitely not meant for bottle ageing. We strongly recommend to drink it now, as long as it is still young and beautiful and of course, try and pair this wine with some oven baked salmon with garlic butter dressing, as there are few wine-and-food pairings that can reach this level of awesomeness, just give it a try.
