Today we are going to review a single varietal rara neagra wine – Raritet Rara Neagra 2018 by Carlevana. Verdict: this is a very nice rara neagra wine – light in body, lean and crisp, with highlighted acidity and a warming alcoholic touch on the mouthfeel. This is a fine example of a wine that is still under development, therefore we would suggest at least 2 more years of bottle ageing, as in its current state it definitely lacks complexity and structure. Overall the wine has a quite nuanced fruity-savory palate, with underripe red fruits and insistent earthy-dusty hints. The wine feels round, maybe a bit wide and slightly bitter on the finale, therefore we would recommend to pair it with meaty dishes that are rich in natural umami flavours, like for example a roast beef tenderloin with red wine sauce or a medium-rare sirloin steak. Cheers!
