Today we are going to review another single-varietal cabernet sauvignon wine, this time one from the famous Samburesti-Bolovanu vineyards, a wine that is rightly considered to be one of the best that Romania has produced – Soare Cabernet Sauvignon 2018 by Domaine Vinarte. Cabernet Sauvignon is grown all over the world in a wide range of climates and regions and it can produce wines that are very high in tannins and acidity, that can mature and develop for many years in the bottle. Cabernet Sauvignon is also a late ripening grape variety, which means that it is best suited for warm climates, where it is capable to produce wines that can reach into realms of perfection, where they are rarely followed. The constant search for perfection makes this wine a real classic – vinified in a genuine Bordeaux-style, with carefully selected, hand picked grapes, where production was limited to 3500 kg/ha, so that all the grapes reach optimal maturity and flavour concentration. The wine has been aged for 18 months in small, french oak barriques, bottled and then aged in the the cellar for an additional 6 months before the market release. Verdict: this is a firm, complex and rustic cabernet sauvignon wine, with a nuanced, gamey-delicate profile and a voluptuous palate. It is still in the development phase, therefore we would recommend to give it 3 or 5 more years of bottle ageing, in order to allow it to reach its full potential, but don’t overdo it as it is always better to drink a wine a year too soon than a day too late. On the nose the wine brings a mixture of ripe black fruits in the foreground, followed by a very nuanced gamey-rustic background and an earthy-spicy layer in between the two. On the palate the wine delivers crisp acidity, ripe and fine-grained tannins and an overwhelming touch of alcoholic warmth that is showing through on the mouthfeel, which leads to a seedy-crisp aftertaste. All in all, this is a very delicate, old-world cabernet sauvignon wine with a plump and grippy mouthfeel and a quite rustic aromatic profile. Our recommendation is to pair it with naturally scented, gamey dishes, like for example some lamb chops or wild boar. Cheers!
