Today we are are going to review a very intriguing wine blend from Cachapoal Valley, which is one of Chile‘s most promising wine regions – Sideral 2019 by Viña San Pedro. Viña San Pedro was founded in the Curicó Valley in 1865 by the Correa brothers – a pioneering family who were among the first to experiment with Bordeaux grape varieties in the region. This wine is the product of a collaboration between Viña San Pedro and Chateau Dassault – a respected Grand Cru Classe estate from Bordeaux. The wine is a blend of five grape varieties: cabernet sauvignon (64%), syrah (23%), carmenère (6%), petit verdot (6%) and cabernet franc (1%), where cabernet sauvignon forms the wine’s main body and structure, syrah is all about spice and black fruit flavors, carmenère builds a more refined mid-palate, petit verdot add some floral notes and enhances the wine’s color depth, whereas cabernet franc offers a leaner and a more dynamic finish. The grapes for this wine are sourced from the estate’s high altitude vineyards, planted on alluvial and volcanic soils in the Valle de Cachapoal Andes region, that are rich in blue basalt rocks. In order to soften the tannins and add extra complexity to the final blend, the wine has been aged for 14 months in french oak barriques, from which 90% small, 225-liters barriques and 10% big, 2000-litres foudre. Sideral (from the latin word ‘sideralis‘, meaning ‘constellation‘), embodies the perfect harmony of each grape variety and their flawless fusion into a blend of exceptional quality. These luscious fruit notes intertwine gracefully with delicate nuances of iron, veal and barnyard, that create a pleasantly-savory complexity. Subtle hints of brown olive and cured meat add a layer of rustic charm. In the background, a delightful interplay of flavors unfolds, with nuances of cloves, anise and red pepper mingling harmoniously with subtle undertones of paprika, rooibos tea, sun-dried oakwood and tobacco.
