Today we are going to review a single varietal cabernet sauvignon wine from the relatively cool Minis wine region of TransylvaniaJosef | Cabernet Sauvignon 2017 by Pivnitele Birauas. Cabernet Sauvignon is grown all over the world in a wide range of climates and regions and it can produce wines that are very high in tannins and acidity – wines that can mature and develop for many years in the bottle. Cabernet Sauvignon is also a late ripening grape variety, which means that it is best suited for warmer climates, where it is capable to produce wines that can reach into realms of perfection, where they are rarely followed. This wine has been produced in a limited edition of only 2900 bottles and its name is a tribute to the old name of the propriety – Josef Domany. The grapes for this wine were sourced from the Ghioroc vineyard in Minis and, in order to soften the tannins and gain extra complexity, the wine has been aged for 18 months in french oak barriques, with additional 12 months of bottle ageing, before it was deemed ready for release on the market. On the first nose, the wine offers a captivating olfactory experience, with a prominent fruit character of dehydrated and dried fruits. The foreground unveils a delightful array of dried black cherry, dried black plum, dried sour cherry and dried cranberry, which intertwine gracefully with the background aromas, where dried herbs, sun-dried oak, red pepper, anise and oak tree bark lend a subtle complexity. Some intriguing hints of dried basil, wormwood and subtle earthy nuances of brown soil add some much desired complexity to the aromatic plane, creating a genuine sense of allure.

On the palate, this wine offers an intriguing interplay of flavors that engage the senses with its ripe, rich and firm profile. The crisp acidity adds vibrancy, while the ripe tannins provide structure and a satisfying grip on the mouthfeel. A touch of alcoholic warmth highlights the overall experience, that is enhanced by a layered flavour combination of dried fruits, spice and oak. The aftertaste is ripe and slightly austere, leaving a long lasting impression.

Overall, this wine exhibits a rich and seedy character with a nicely structured profile. It doesn’t fail to deliver a captivating interplay of flavors and aromas, showcasing its authenticity, however, there is a slight angularity and lack of finesse on the palate, that hampers a bit the overall wine balance. While this wine may not achieve perfect harmony, it still offers a genuine and intriguing experience, as it holds some promises for future refinement. This cabernet sauvignon wine is targeting those wine enthusiasts, who can appreciate a honest red with a touch of rustic charm and a genuine character.
