We are still discovering Wine of Moldova for the time being and this time we’ve decided to review something really special – Sauvage Rosé Extra Brut from Cricova. It is special because it is made in an authentic méthode traditionelle style, exactly the same way as original champagne is being made in France, with the sole exception that there is no dosage before bottling (méthode sauvage), making it a very dry sparkling wine – hence the term extra brut.
Let’s take a deeper look at the tasting notes and the wine’s review statistics:
Visual
The wine has a clear salmon-pink color, with some pearl shine, with bright pink rim color.
Olfactory
The nose is rich and clean, with no signs of wine faults. The first nose is sharp and insistent, and it bring notes of sweet fruits & citrus: sicilia orange, red mirabelle, red bell pepper, gooseberry, strawberry, raspberry, melon and a hint of white apple.
Gustatory
The wine is medium dry with moderate, well integrated, alcohol level. High acidity, a very important element of every crémant wine, is very well integrated into the body and, in tandem with dry tannin, forms a good overall balance. The wine tastes bittercrisp, fresh and savory at the same time. It feels quite smooth on the mouth-feel, with a nuanced mineral accent and a refreshing, just a bit opulent body.
Aftertaste
The wine has a long-minus, but velvety aftertaste. It is a bit shorter than expected, but quite refined and noble.
This is definitely a fine Wine of Moldova and the overall rating says the same, with 88.7 points scored it is right there, among the best wines we’ve tasted so far. Last but not least, it is to be mentioned that even though, here in Moldova , the regular consumer rarely spends money on a sparkling wine prior to the off-dry category, this one here is really standing proud – a sparkling wine that breaks all the stereotypes: rosé, extra dry, made of pinot noir and cabernet sauvignon grape varieties – a real pioneer and an example to be followed by all those who dare to dream and reach the excellence itself. Did we mention that sparkling wine is a very good pairing partner for a wide range of foods? Just try it yourself – you will be as much amazed as we are.

I totally loved it. Cricova has a very decent and fine wine collection. I’ve been to Moldova once, and I just felt in love with their wines.
