Tonight we are going to review a quite intriguing wine – Cabernet Sauvignon 2018 by Cricova. The wine is made of cabernet sauvignon grapes, which in fact is a red grape variety, while this wine here is white of color. It is because the wine is made in a non-traditional, blanc de noir style, meaning that this is a white wine that is made of red grapes. In vinification terms it means that the juice from the grapes is separated from the skins as soon as possible to avoid pigmentation. The resulting wine is quite close to a regular white wine, because the pulp of the berry is in fact grey of color, without any color extract. In other words, the red grapes are vinified using the white wine technique. That said, without further ado, let’s take a look at the wine tasting results.

The nose is strong, filled mostly with green and sweet fruits flavours: nashi pear, ripe gooseberry, white apricot, quince, lemon, lindenflower, marguerite daisy, white nectarine, white mulberry, hay, straw grass, white apple, lemon grass, honeysuckle and some subtle hints of pineapple.

The wine is dry, with high alcohol level, medium acidity and ripe tannin. This is a quite refreshing, supple and a crisp wine, with a pronounced fruity, yet seedy profile. It tastes a bit sharp, slightly bitter and angular, with a lush and firm mouthfeel. The wine has a fair overall balance, with a woody and muscular finale and a touch of alcoholic warmth.

Conclusion: this is a quite refreshing and zesty wine – nicely structured, fairly balanced, with a nuanced fruity-citrusy profile and a quite seedy yet supple palate – a wine that is right there, at the peak of its form, therefore we would recommend to drink it yesterday. It feels a bit angular due to its muscularity and that slight bitterness that is present on the mouthfeel. In order to smoothen the above mentioned edges, we would recommend to pair this wine with smooth-textured seafood dishes, like for example fried calamari with lemon slices or some steamed mussels with white wine and lemon-garlic dressing.
