The wine we are going to review tonight is a living legend – a single-varietal cabernet sauvignon wine from Romania, a wine that is rightly considered to be one of the best that Romania has to offer – Soare Cabernet Sauvignon 2017 by Vinarte. Cabernet Sauvignon is grown all over the world in a wide range of climates and regions and it usually has high tannins and high acidity, thus it can produce outstanding quality wines that can mature and develop for many years in the bottle. This wine has been vinified in a pure Bordeaux style, with carefully selected, hand picked grapes and moderate use french oak (15 to 18 months in small barriques). Production is limited to 3500 kg/ha, so that all the grapes reach optimal maturity. The wine is then bottled and aged in the cellar for an additional 6 months before the release. Verdict: this is a well structured, old-world cabernet sauvignon that has yet to reach the summit of its prime form – thus it will benefit from another 4 or 5 years in the bottle. This is a wine of great quality, one that delivers firm and ripe tannins, crisp, overwhelming acidity and, with a little more time in the glass, a plethora of delicate and mesmerizing notes of lavender and truffles that are sought after by the wine connoisseurs. Soare is one of the best cabernet sauvignon wines we’ve tasted so far – rich, bold and complex, with a nuanced fruit-forward profile (overripe red & black fruits in the foreground and and hints of leather and dried figs in the background) and very noble oak-derived spiciness that adds to the wine’s flavour profile – a wine that is mixing elegance and power with finesse. needles to mention that this is a wine that should be decanted for at least 30 minutes prior to serving.
