Today we are going to evaluate another single-varietal cabernet sauvignon wine, but this time from the Murfatlar region in the south of DobrogeaDaima Cabernet Sauvignon 2017 by Crama Trantu. Cabernet Sauvignon is grown all over the world in a wide range of climates and regions and it can produce wines that can mature and develop for many years in the bottle. Cabernet Sauvignon is also a late ripening variety, which means that it is best suited for warmer climates, where it can produce wines that can reach into realms of perfection. This particular wine has been obtained by blending 35% of the unoaked wine (that has been matured in stainless steel vats) with 65% of its oaked counterpart, that has been aged for 12 months in oak barrels. Verdict: this is a quite angular cabernet sauvignon wine that is definitely a bit off its balance: rough, sharp and austere – a wine that requires a couple more years of bottle ageing, as in its current form it lacks any form of harmony and finesse. It tastes bitter, green and aggressive, with unripe fruit in the foreground and a nuanced savory accent in the background. The wine delivers an overwhelming alcohol warmth on the mouthfeel, with green tannins and flabby acidity, which leads to a bitter-rough aftertaste. In order to counter-balance all the sharp edges in the wine, we would suggest to pair it with spicy or barbequed meats, like for example a butter-basted rib eye steak with thyme and garlic. Noroc!
