Today we are going to review a single-varietal cabernet sauvignon wine that was released incognito on the market and become a hit overnight, a wine that is made by a relatively unknown winemaker from the Valul lui Traian wine region – Noble Savage Cabernet Sauvignon 2019 by Somma Winery. Somma Winery was founded a couple of years ago by the two sommelier brothers, Eugen & Alexandru Sîrbu, with the philosophy of producing artisan wines with minimal intervention in the winemaking process, thus letting the nature and the sense of place manifest themselves through the grapes and into the wine. Cabernet Sauvignon is grown all over the world in a wide range of climates and regions and it can produce wines that are high in tannins and natural acidity, wines that can mature and develop for many years in the bottle. Cabernet Sauvignon is also a late ripening grape variety, which means that it is best suited for warm climates, where it is capable to produce wines that can reach into realms of perfection. This particular wine has been fermented partially on ambient yeast and partially on selected yeast, aged for 12 months in used oak barrels and bottled unfiltered in order to preserve the purity of fruit characteristics and the expression of the Ciumai terroir – a wine produced in a limited edition of only 1800 bottles. Verdict: this is a wild and quite fruit-forward cabernet sauvignon wine: crisp, supple and lean – a wine that is still developing into the bottle and one that can be already enjoyed today or in the next 1-2 years. It tastes youthful and slightly tart, with fine-grained tannins, overwhelming acidity, fine-grained tannins and a quite elevated alcoholic warmth on the mouthfeel. On the nose the wine delivers a nuanced, fruity-rich foreground (with ripe and overripe  red and black fruits), followed by a very appealing, spicy and a bit oaky background. All in all, this is a nicely balanced and quite well structured cabernet sauvignon wine, with a medium body and a seedy-crisp finale – a wine that in its current state might lack some elegance and finesse on the palate, otherwise a fine wine indeed. Our recommendation is to get one today and enjoy it as long as it is still young and beautiful. Keep in mind that it is always better to drink a wine a year too soon than a day too late. Cheers!
