Today we are also going to review a single-varietal cabernet sauvignon wine from the famous Purcari micro-region of Stefan-VodaCabernet Sauvignon 2019 by Domeniile Pripa. Cabernet Sauvignon is grown all over the world in a wide range of climates and regions and it can produce wines that are very high in tannins and acidity, wines that can mature and develop for many years in the bottle. Cabernet Sauvignon is also a late ripening grape variety, which means that it is best suited for warm climates, where it is capable to produce wines that can reach into realms of perfection, where they are rarely followed. In order to gain more body structure, complexity and authenticity, this wine has been aged only in moldovan oak barriques. But enough with all that theory, that said and without further ado, let’s take a look at the wine tasting results.

Verdict: this is a quite expressive and oaky cabernet sauvignon wine with an rich, fruity-expressive nose and a quite grippy, slightly angular mouthfeel – a wine that despite its youthfulness, already displays some very nuanced hints of oxidation, thus a wine that will not improve over time due to the dehydrated character of the detected fruit flavours. It feels firm, bold and woody, with dehydrated and candied black fruits in the foreground, supported by an intense, oaky-spicy background and a very subtle, earthy layer in between. On the palate the wine delivers exuberant acidity, ripe and grippy tannins and an overwhelming touch of alcoholic warmth that is showing through on the mouthfeel, all of which leads to a crisp & hot aftertaste. All in all, this is a quite unpolished, heady and austere, new-world styled cabernet sauvignon wine, that in its current state feels aggressive, lacking both, harmony and balance on the palate. Our recommendation is to pair this wine with spicy meats, like for example a blueberry-glazed filet mignon, or a classic grilled T-bone steak. Cheers!
