Today we are also going to review another intriguing, single-varietal pinot noir wine, which is at its third edition (you can read here and here the full reviews of the first and second edition respectively) – Pinot Noir Volumul III 2019 by Divus Winery. Pinot Noir has reached a legendary status over the last decades and today it is the most sought-after red wine in the world. The grape itself is quite vulnerable, suffering from a multitude of diseases and its genetics make it highly susceptible to mutation. But despite all the difficulty to grow pinot noir, when treated with utmost care, it is capable of producing the very best expressions of terrior. The wine we are tasting today has been aged only in used french oak barrels (at second and third use) for 4 months, in order to add slightly more flavour complexity and, at the same time, to preserve the varietal characteristics of the pinot noir grape variety. Needless to mention that, similar to the previous two versions, this wine was produced in a limited edition of only 4000 bottles. That said and without further ado, let’s take a look at the wine tasting results.

On the first nose, this wine reveals a ripe fruit character. The foreground delivers notes of sour cherry, bitter cherries, red plums and cranberries, thus creating a vibrant fruity profile. These notes are complemented by subtle oaky undertones (roasted wood, coconut and sun-dried oak), that add a touch of complexity. In the background, delicate herbal notes emerge, bringing forth a subtle herbaceous charm with hints of tomato leaf, wormwood and dried thyme, with a whisper of spice (red pepper) and earthiness (clay and marl) to round up the aromatic profile and add a layer of sophistication.

On the palate, this wine unfolds a compelling symphony of flavors, characterized by its ripe fruit profile, dominated by notes of red fruits, oak and subtle spice. The wine’s crisp acidity provides a refreshing and lively sensation on the mouthfeel, complemented by seedy tannins, that add a texture and robustness, with a heady touch of alcoholic warmth, that further enhances the wine’s overall structure. The aftertaste is marked by an inviting, crisp & seedy nature, leaving a lasting impression. While the wine’s palate may feel slightly austere and angular side, it manages to maintains the required balance, making this wine a commendable choice for those, seeking a palate that marries richness with a touch of vibrancy.

All in all, this is an ample, vibrant and rich Pinot Noir wine, with nice varietal typicity and a slightly herbaceous accent. The wine’s aromatic profile reveals a captivating interplay of ripe red fruits, pronounced oaky undertones and subtle hints of spice, with the oak taking central stage. However, on the palate, the wine displays a bit of angularity and a some austerity, thus lacking the desired harmony and elegance that a fine Pinot Noir can deliver. While the wine offers a promising glimpse into its potential, it currently falls short of delivering a fully integrated and balanced experience. This wine would benefit from another year of bottle ageing, in order to get closer to its full potential.

Pairing: Judging by the wine’s slightly angular and austere palate, we would recommend to pair it with a dish that embraces the wine’s vibrancy, like for example roasted duck breast with a cherry and balsamic reduction sauce. The wine’s rich, red fruit character and subtle hints of spice, will complement the succulence of the duck meat, while the seedy tannins and crisp acidity in the wine, will cut through the richness of the dish. In the same key, the herbaceous accent in the wine, will find resonance with the herbal notes of the balsamic reduction, thus creating a harmonious balance and a delightful dining experience with an appealing interplay of flavors.
