Today we are going to review a single-varietal cabernet sauvignon wine from the warm Villány region, situated in the south of HungaryCabernet Sauvignon 2021 by Kiss Gábor. Cabernet Sauvignon is grown all over the world in a wide range of climates and regions and it can produce wines that are high in tannins and acidity, wines that can mature and develop for many years in the bottle. Cabernet Sauvignon is also a late ripening grape variety, which means that it is best suited for warm climates, where it is capable to produce wines that can reach into the realms of perfection, where they are rarely followed. In order to add a layer of extra complexity to the final wine, but at the same time, to preserve the varietal characteristics of the cabernet sauvignon grapes, this wine has been aged only for 6 months in big, 500-liters, used french oak barrels. But enough with all that theory, that said and without further ado, let’s take a look at the wine tasting results.

The first impression on the nose is rich and captivating, offering a burst of ripe black fruit aromas. Think dark cherries, blackberries and hints of cassis, all bursting with ripeness. All that is complemented by an intriguing layer of dusty character, hinting at dry earth, charcoal and even tobacco leaves. This adds a touch of complexity and keeps the fruit from feeling overly jammy. In the background, oak influence emerges, but in a pleasing way, offering whispers of toasted oakwood, cloves and nutmeg, that further complement the aromatic profile, suggesting a well-integrated wine with a touch of personality.

The palate follows the nose, delivering a wave of ripe black fruit flavors. Hints of oak influence appear here as well, adding touches of vanilla and baking spice alongside the fruit. The wine’s bright acidity cuts through the richness of the fruit beautifully, keeping the wine lively and fresh. The tannins, ripe and quite grippy, provide structure without being astringent. A touch of alcoholic warmth adds depth and lingers slightly on the finish, creating a crisp and slightly seedy aftertaste. The mouthfeel feels firm and well-structured, suggesting a wine with good aging potential.

Despite being nicely balanced and having an intriguing dusty character, in its current state the wine comes across as overly firm and lacks the elegance or finesse one might expect from a premium cabernet sauvignon. It may benefit from additional bottle aging, in order to allow the tannins to soften a bit and integrate further. That said, the wine is currently enjoyable for those who appreciate a bold and dusty cabernet sauvignon wine with a good aging potential.

Pairing: With its bold and dusty character, this cabernet sauvignon wine would be a fantastic match for a rich and flavorful meat cut like for example a grilled rib eye steak. The grippy tannins in the wine will stand up well to the fat content in the steak, while the wine’s bright acidity will help cut through the richness of the meat texture. In the same key, the dusty-earthy tones in the wine will complement the smoky flavors imparted by the grill, creating a harmonious pairing experience.
