The story of Tonon winery began as an idea, rooted in the vocation of Pietro Tonon, blossomed into a lifelong project under the guidance of his son, Loris. Since its inception in 1936, the winery has championed a philosophy that balances quality, technological advancement, and experience, creating an ever-evolving mosaic that continues to bear exceptional wines. The blend of perseverance and respect for the land fosters a collaborative spirit that is integral to their success.
Today we are going to review a genuine Prosecco wine – that appealing and refreshing sparkling wine style that is so much sought after all over the world – Valdobbiadene Prosecco Superiore Brut Millesimato 2024 by CAMÚL (a wine brand by Vini Tonon). Made out of glera grapes, that were sourced from the Conegliano Valdobbiadene area within the Prosecco sub-region in Treviso (an appellation renowned for producing the highest quality Prosecco wines), this wine has been produced using the non-traditional tank method developed by Federico Martinotti (also known as Martinotti Method or Méthode Charmat, as later it was improved by Eugéne Charmat), with second fermentation in pressurized tanks. This wine style is growing in popularity with each passing season and there’s a reason why – Prosecco tends to have boisterous fruit and mesmerizing flower aromas, and because it ages in large tanks with less pressure, Prosecco has bigger and lighter bubbles that don’t last as long as in classic Champagne wines. The aromatic profile of a Prosecco is mesmerizing, so much that it has become the most famous italian sparkling wine, and it is meant to be enjoyed young and fresh, in order to experience its full aromatic profile and zingy fizziness.

When it comes to sparkling wines, not all of them are created the same way. One of the key differences lies in how the bubbles are formed — specifically, whether the wine undergoes its second fermentation in the bottle (traditional method) or in large pressurized tanks (tank method, also known as charmat method). In the tank method the secondary fermentation happens in stainless steel tanks rather than individual bottles. This process is quicker, more cost-effective, and preserves the wine’s vibrant fruit character and freshness. The result is a more aromatic, easy-drinking sparkling wine with crisp acidity and minimal yeasty complexity (think of Prosecco). On the other hand, the traditional method is a more time-intensive process, as the second fermentation happens in the bottle, where the wine also ages on the fine lees (the dead yeast particles) for extended periods, from several months to several years. This slow aging builds extra layers of complexity on the nose and creates a creamy textures on the palate (think of classic sparkling wines like Champagne, Cava, or Franciacorta).
Today’s wine has been produced using the ‘white winemaking‘ technique, where secondary fermentation occurs in pressurized autoclaves for an extended period of 5 months at controlled temperatures (15-18 °C). This prolonged contact with selected fine lees (the dead yeast cells that are left over from the fermentation process) is designed to intensify the wine’s aromatic complexity. Following the sur lie ageing in pressurized tanks, the wine is cooled to -4°C for stabilization before bottling. The ‘Superiore‘ designation indicates a higher alcohol content and an extended period of bottle aging, resulting in a wine with greater complexity and structure than a standard Prosecco wine.

The Conegliano Valdobbiadene micro-regions enjoy a favorable cool continental climate and diverse soil types, featuring clay, marl, sandstone, and Miocene molasse. The unique geography of this very small area, with altitudes ranging from 225 to 350 meters, allows for optimal grape ripening. The mix of clay and limestones allows for good drainage that supports deep root growth and deliver the much needed nutrients, while the cool breezes during summer nights preserve the natural acidity and aromatic intensity of the grapes. The region’s rolling hills create a microclimate with a long growing season that allow the grapes to ripen fully and develop complex aromatic compounds. All those factors form a quite complex and diverse micro-terroir that allow for production of a high-quality sparkling wines.

The wine presents a captivating, pale straw-white color, shimmering with subtle citrine reflections that dance towards the rim. Delicate pastel-yellow shades gracefully adorn the glass edges, hinting at the wine’s youthful freshness and vivacity. The perlage is fine and persistent, with a steady stream of elegant, tiny bubbles rising gracefully to the surface, creating an inviting visual spectacle.

The aromatic profile is is rich, with a fruity-floral accent, and a ripe fruit character. The foreground is dominated by a medley of zesty citrus notes, including lemon, lime, pomelo, and sicilian orange. These are beautifully intertwined with an enchanting bouquet of floral aromas, featuring acacia blossoms, lindenflower, jasmine, and honeysuckle. Adding an intriguing layer of complexity, hints of passion fruit and lychee emerge, providing a truly opulent aromatic dimension. As the aromas evolve, the background unveils a delightful array of orchard fruits, such as nectarine, white apple, the asian pear, and peach. These are complemented by charming sweet notes of ripe cantaloupe and honeycomb, culminating in elegant touches of brioche and biscuit, adding depth and extra aromatic sophistication.

The wine feels off-dry, with a gentle caress of sweetness that adds charm without being cloying, harmonizing beautifully with its crisp, vibrant acidity. A nicely integrated touch of alcoholic warmth adds structure and depth without ever dominating, allowing the wine’s natural effervescence and fruity profile to shine. This creates an effortless drinking experience that is both enjoyable and appealing. The finish is crisp and pleasingly sweet, leaving a lingering, refreshing aftertaste. While exhibiting a delightful exuberance, this Prosecco focuses on immediate pleasure and flamboyance, perhaps forgoing the intricate structural complexity sometimes associated with certain top-tier Millesimato Prosecco sparkling wines, yet it delivers an undeniably appealing and easy-drinking experience.

All in all, this is a fresh, flamboyant, and nicely structured sparkling wine with a citrusy-floral aromatic profile – a real crowd-pleaser that is both rich and extremely appealing. Its light body and easy-drinking nature make it wonderfully approachable. This sparkling wine is focused around exuberance and immediate gratification. While slightly opulent and light in body, it gracefully leans into its vivacious character, delivering a truly appealing experience. Currently in its prime, showcasing its full aromatic potential and zingy fizziness. We recommend enjoying it today or within a year to fully appreciate its vibrant freshness, as this style of Prosecco is not crafted for extensive ageing but rather for immediate enjoyment and pure pleasure.

Given its off-dry character, crisp acidity, and delightful fruity-floral notes, this wine is a remarkably versatile companion at the table. It would shine as an apéritif, stimulating the palate before a meal. Also, consider pairing it with light hors d’oeuvres such as fresh bruschetta with ricotta and honey, or delicate vegetable spring rolls.
