Today we are going to review a wine that is both, rare and unique, as it is a white wine made of cabernet sauvignon grapes – Blanc de Cabernet from Radacini. In order to make a white wine from red grapes, winemakers use a technique, where the juice from the grapes is separated from the skins and seeds as soon as possible to avoid pigmentation and tannin extraction. The resulting wine is quite close to a regular white wine, because the pulp of the berry is grey. But enough theory, let’s get back to the tasting.

Visual
Straw white color with shades of pale yellow towards the rim of the glass.
Olfactory
The nose is rich, filled mostly with sweet and citrus fruits: lemon, straw grass, white apple, pomelo, fresh cut grass, white pear, apricot, almond, nettle, chalkstone, gooseberry and some nuanced hints of banana and melon.
Gustatory
The wine is medium-dry, with high alcohol level, high acidity and ripe tannin. It tastes zesty, citrusy and fruity, with a nuanced herbal accent. This is a mineral, tart and arefreshing wine with a fair overall balance.
Aftertaste
The wine has a medium finish and a balanced, a bit scrid aftertaste.

This is definitely a fine Wine of Moldova and the overall rating says the same, with 89.7 points scored it is right there, among the best wines we’ve tasted so far. Conclusion: this wine is quite close to its prime form, ready to drink now, with maybe a bit too much acidity. It has a nice aromatic profile and a nuanced citrusy mouthfeel. This wine is surprisingly good, it may benefit from another 3 to 6 months of bottle ageing in order to smoother its edges. We would recommend to pair it with fresh seafood, white sauce dressed pasta or soft cheese like brie and camembert. Enjoy.
